An Indian-born Canadian chef, cookbook author, and television personality, Vikram Vij grew up in Amritsar, Delhi and Bombay, India. He studied Hotel Management in Salzburg, Austria, where he also received his chef’s training and became a certified sommelier.
In 1994 at the age of 30, he opened a fine-dining restaurant, Vij’s, in Vancouver. By 2003, Mark Bittman of The New York Times was praising Vij’s Restaurant as “easily among the finest Indian restaurants in the world”.
By 2014, Vij had opened the casual-style Rangoli, Vij’s Railway Express, a mobile food truck serving top quality Indian curries for weekday lunch and at private catering events, and My Shanti.
His restaurants have received many accolades. Vij’s was one of the twenty featured restaurants at the James Beard Annual Gala Awards 1998, in New York City. Vij’s was listed in the top five Vancouver restaurants in Gourmet magazine’s annual restaurant awards, as well as receiving Chef of the Year from Vancouver Magazine in 2015. My Shanti was listed as number one in the Globe and Mail’s Top 10 New Vancouver Restaurants of 2014 and one of the Vancouver Sun’s Best New Restaurants for 2014. My Shanti also won Vancouver Magazine’s Best Indian Restaurant in 2016.

A remarkable destination in and of itself and a UNESCO World Heritage town, Tel Aviv has ancient roots and modern skyscrapers, with diverse offerings from shopping for local crafts at the Nachlat Binyamin Pedestrian Mall to admiring the original Bauhaus architecture along Rothschild Boulevard, sa- voring the local cuisine at cafes to delving into history at one of the countless museums. Tel Aviv is also a starting point for day trips to iconic historical sites as Jerusalem’s Old City, Bethlehem, Massada and Jaffa, one of the oldest cities in the world.
Limassol is the jumping off point to explore the ancient riches of Cyprus. View ruins, vast groves of lemons, oranges and olives, majestic mountains and scenery, and stunning beaches. Visit Lemesos Castle, where Richard-the-Lionheart married Berengaria of Navarre, and its fascinating museum. Or stroll through ancient Curium and admire its stunning mosaics, theater, basilica and panoramic views over the sea. Venture inland to Nicosia and its wonders, the Cathedral of St. John, the Venetian fortifications, a restored old town and mosque and the Museum. Alanya rose to prominence during the Middle Ages under
the Seljuks, a tribe from central Asia that built the fortress and protective wall that still dominate the city. Several other buildings from that time also remain, including the octagonal Red Tower and the Seljuk Shipyard. Thousands of archaeological pieces in the Alanya Museum attest to the city’s importance through the ages. But history only touches on Alanya’s considerable allure. The city sits on a lovely gulf, backed by the pine-forested Taurus Mountains on Turkey’s beautiful Mediterranean coasty.
Renowned as the site of the former Colossus of Rhodes, one of the Seven Wonders of the Ancient World, Rhodes was home
to the Knights of St. John from the 12th to 16th centuries. Their famous Palace of the Grand Masters remains a “must-see,” as are many of the inns occupied by the Crusaders and the replica of the old church. For a more in-depth look at the city, visitors can take in the Archeological where the Acropolis of Rhodes and the ancient stadium offer perfect photo opportunities.
